Overview
Heptaldehyde also known as 1-Heptanal is an aldehyde of a chain of seven carbon atoms.
It is a colourless, oily liquid with a fruity odour which is why it is mainly used in the fragrances and flavours industry.
Heptanal is practically insoluble in water but is miscible with alcohol.
It is obtained by cracking of ricinoleic acid which is the main component of castor oil.
