Undecylenic Acid also called as 10-Undecenoic acid is an unsaturated fatty acid having its double bond in the 10-position. It is obtained by cracking of Ricinoleic acid, which is derived from Castor oil. The cracking also yields Heptanal. Undecylenic acid is known for its anti-fungal properties which means that it prevents the growth of fungus. It is also the starting material for other important fragrance chemicals and flavouring agents.
